Veg Ragi Sewaiyan is a nutritious, fiber-rich dish made with wholesome finger millet vermicelli and fresh vegetables, lightly sautéed with spices. It’s a healthy, gluten-free meal perfect for a light lunch or dinner.

Ingredients

1.

1 cup ragi vermicelli (soaked as per packet instructions)

2.

1 tsp oil or ghee

3.

1/2 tsp mustard seeds

4.

1/2 tsp cumin seeds

5.

5–6 curry leaves

6.

1 green chili (optional)

7.

1/2 cup chopped mixed veggies (carrot, beans, peas, capsicum)

8.

Salt to taste

9.

1/4 tsp turmeric

10.

Chopped coriander for garnish

11.

Optional: A dash of lemon juice

Instructions

1.

Soak ragi sewaiyan for 3–5 minutes or as instructed, then drain.

2.

Heat oil in a pan, add mustard seeds, cumin, curry leaves, and green chili.

3.

Add veggies, sauté 3–4 minutes with turmeric and salt.

4.

Add soaked ragi vermicelli, mix gently.

5.

Cover and steam on low flame for 3–4 minutes.

6.

Garnish with coriander and lemon juice.
