Recipe Description
VegKhandvi is a light, healthy snack made from gram flour and buttermilk, rolled into soft, bite-sized pieces. It's gently spiced and topped with a flavorful mustard seed tempering.
Ingredients
1 cup besan (gram flour)
1 cup buttermilk (or ½ cup curd + ½ cup water)
½ teaspoon turmeric powder
½ teaspoon ginger-green chili paste (optional)
Salt to taste
1 teaspoon lemon juice
1 teaspoon oil
1 teaspoon mustard seeds
A pinch of asafoetida (hing)
6-7 curry leaves
1-2 green chilies, finely chopped
Fresh coriander leaves and grated coconut for garnish
Instructions
Mix besan, buttermilk, turmeric, ginger-chili paste, salt, and lemon juice into a smooth, lump-free batter.
Cook the batter on low to medium flame, stirring continuously, until it thickens.
Quickly spread the batter thinly over the back of steel plates or a clean flat surface.
Once it cools a little, cut into strips and roll them gently.
For tempering, heat oil, add mustard seeds, let them splutter, then add hing, curry leaves, and green chilies.
Pour the tempering over the Khandvi rolls.
Garnish with fresh coriander and grated coconut before serving.
