VegThis healthy chickpea curry made in mustard oil is rich, flavorful, and packed with plant-based protein. The mustard oil adds a bold, earthy aroma while keeping the dish light and wholesome — perfect for a nutritious lunch or dinner.
Ingredients
1 cup boiled chickpeas (kabuli chana)
1 tbsp mustard oil
1 medium onion (finely chopped)
1 tomato (finely chopped or pureed)
1 tsp ginger-garlic paste
1 green chili (optional)
½ tsp turmeric powder
1 tsp coriander powder
½ tsp red chili powder (optional)
1 tsp cumin seeds
½ tsp garam masala
Salt to taste
1–1.5 cups water (as needed)
Fresh coriander leaves (for garnish)
½ tsp lemon juice (optional)
Instructions
Heat mustard oil in a pan until it starts to smoke slightly (this removes its raw smell). Let it cool for 5–10 seconds.
Add cumin seeds and let them crackle.
Add chopped onions and sauté till golden brown.
Stir in the ginger-garlic paste and chopped green chili. Cook for 1 minute.
Add turmeric, coriander powder, red chili powder, and salt. Stir well.
Add the chopped tomato and cook till oil separates (4–5 minutes).
Add boiled chickpeas, mix well, and mash a few with the spoon for thicker texture.
Add water and simmer for 10–12 minutes.
Sprinkle garam masala and garnish with fresh coriander.
Add lemon juice before serving (optional).
