Here’s a healthy soya wraps recipe that’s protein-rich, fiber-packed, and perfect for a nutritious lunch or light dinner:

Ingredients

1.

1 cup soya granules

2.

1 tsp olive oil or ghee

3.

1 small onion, finely chopped

4.

1 small capsicum, finely chopped

5.

1 small carrot, grated

6.

1 tsp ginger-garlic paste

7.

1 small tomato, chopped (optional)

8.

1 tsp coriander powder

9.

½ tsp jeera (cumin) powder

10.

½ tsp red chili powder (optional)

11.

Salt to taste

12.

Fresh coriander leaves, chopped

Juice of ½ lemon

Instructions

1.

Boil water and soak soya granules for 10 minutes.

2.

Squeeze out excess water and keep aside.

3.

Heat oil/ghee in a pan.

4.

Add onion, sauté till soft. Then add ginger-garlic paste.

5.

Add capsicum, carrot, and tomato (if using). Cook for 3-4 minutes.

6.

Add soaked soya granules, spices, and salt. Cook for another 5-6 minutes till everything is well combined and dry.

7.

Turn off the heat, add lemon juice and coriander.

8.

Warm the rotis or wraps.

9.

Spread 1 tbsp hung curd over each wrap.

10.

Add the soya mixture and some fresh sliced veggies.

11.

Roll tightly and serve immediately or grill for 1-2 mins on a pan for extra crispness.
