VegLow-calorie Sooji Uttapam is a healthy, quick-cook savory pancake made with semolina, curd, and fresh veggies. It's lightly cooked with minimal oil, making it perfect for weight-conscious meals.
Ingredients
1 cup sooji (semolina)
1/2 cup curd (yogurt)
1/4β1/2 cup water (adjust as needed)
Salt to taste
1/4 tsp ENO or 1/2 tsp baking soda (optional)
Onion
Tomato
Green chili (optional)
Coriander leaves
Capsicum (optional)
Grated carrot (optional)
Oil or ghee for cooking
Instructions
Mix sooji, curd, salt, and water to make a thick batter.
Let it rest for 10β15 minutes.
Add ENO or baking soda just before cooking and mix gently.
Mix all toppings in a separate bowl.
Heat and grease a non-stick tawa.
Pour a ladle of batter, spread slightly (not too thin).
Sprinkle veggie toppings evenly.
Drizzle oil around edges and top.
Cover and cook on medium flame till golden underneath.
Flip and cook the other side for 1β2 minutes.
Serve hot with chutney or sambar.
