Recipe Description
VegA wholesome, high-protein one-pot meal
Ingredients
Quinoa
Moong dal β ΒΌ cup
Mixed veggies (carrot, beans, peas, spinach)
Onion β 1 small (chopped)
Tomato β 1 medium (chopped)
Ginger-garlic paste β 1 tsp
Cumin seeds β 1 tsp
Turmeric β Β½ tsp
Salt β to taste
Ghee or oil β 1 tsp
Water β 2β2.5 cups
Instructions
Wash quinoa and moong dal. Soak for 15β20 minutes for better digestion.
Heat ghee in a pressure cooker. Add cumin seeds and let them splutter.
Add ginger-garlic paste and chopped onions. SautΓ© till golden.
Add tomatoes, turmeric, and salt. Cook until soft.
Mix in veggies, soaked dal, and quinoa. Stir everything well.
Add water. Pressure cook for 2 whistles or simmer in a pot for 20β25 mins.
Let it rest. Open, mix gently, and serve hot!
