A wholesome, high-protein one-pot meal

Ingredients

Quinoa

2.

Moong dal – ΒΌ cup

3.

Mixed veggies (carrot, beans, peas, spinach)

4.

Onion – 1 small (chopped)

5.

Tomato – 1 medium (chopped)

6.

Ginger-garlic paste – 1 tsp

7.

Cumin seeds – 1 tsp

8.

Turmeric – Β½ tsp

9.

Salt – to taste

10.

Ghee or oil – 1 tsp

11.

Water – 2–2.5 cups

Instructions

1.

Wash quinoa and moong dal. Soak for 15–20 minutes for better digestion.

2.

Heat ghee in a pressure cooker. Add cumin seeds and let them splutter.

3.

Add ginger-garlic paste and chopped onions. SautΓ© till golden.

4.

Add tomatoes, turmeric, and salt. Cook until soft.

5.

Mix in veggies, soaked dal, and quinoa. Stir everything well.

6.

Add water. Pressure cook for 2 whistles or simmer in a pot for 20–25 mins.

7.

Let it rest. Open, mix gently, and serve hot!
